It originated in Japan and is known as Japanese Cheesecake or Japanese Cotton Cheesecake outside of Japan. Its main ingredient is eggs and it is baked in a double boiler. It is a different style from the traditional Soufflé and at Sweet & Healthy Bakery we make it low sugar and with a house cream cheese, without additives.
